The majority of the fresh products used at Saga Hotel are grown organically on our own farm. The farm is situated across near Troizina, less than ten kilometres from the island, on the Peloponnese mainland.

We have five different types of organic olives (Manaki, Cretan, Kalamon, Koroneikes and Megaron) grown on our farm and harvested each winter, usually late October to November. Kalamon olives, originally for eating, we remove the bitterness from the olives using salt and water in the hotel kitchen to make them ready to be enjoyed throughout the coming year. The other, smaller varieties are pressed to extract the extra virgin olive oil that Zefi uses every day to make the snacks and the food of the hotel.

The olive press is within a few kilometres of our farm and we deliver our harvest daily. It takes about 5.5 kg of olives to make a litre of oil. Our extra virgin oil is also for sale upon request.

In our farm there are also many types of citrus trees including oranges, tangerines, grape fruits and lemons. Different varieties flower and ripen at different times of the year so a year round supply is ensured. Our citrus fruits are used to make all the freshly squeezed juices we serve at the pool bar and of course in our hotel's kitchen production.

One of the most important things to us on our farm is our fine colony of free range hens, which daily lay the eggs we cook for breakfast at the hotel and are used in the cakes that Zefi makes for her guests. Geese, turkeys, quails, guinea fowls, pheasants, rabbits and (seasonally) a pig make up the remainder of the livestock at the farm and sometimes make their way into the dishes cooked in the hotel kitchen or on to the barbecue. Stale bread, vegetable peelings, grains and fruits, from the hotel, are used to supplement the organic diet fed to the livestock thus cutting down on waste and ensuring the cycle goes on - recycling at it's simplest level.

Takis is very proud of our Saga wine, made from organic grapes grown locally and bottled under our own label and used exclusively at the hotel. Our vineyard produces red, white and rose wine.

Most of the organic products from our farm can be bought at the hotel to take home with you at the end of your holiday. Also visits to the farm can be arranged at certain times of the year.
